Mr Justin Higgens takes responsibility for the preparation and cooking of food for The Terrace, Churchill Bar & Cigar Divan, Room Service and Banqueting in addition to overseeing a staff of 28 chefs.His position involves menu development for the outlets as well as themed menu creation for corporate functions and food promotions.

He describes his style of cuisine as modern British with Mediterranean influences.
Mr Higgens, aged 30, is married with two children.
