Joe Barbera, owner of Aida Bistro & Wine Bar, says offering wine on tap saves restaurants money.
But Barbera said it makes culinary, financial and environment sense, and he sees its popularity growing. Barbera and his wife, Mary, gave a talk Thursday at the Maryland Science Center about wine on tap.
"It's like infinite, the number of opportunities you have when you have wine on tap, to be able to of special blends to customers," he said in an interview.
It helps restaurants' bottom lines, too. With a wine tap system, restaurants don't have to factor in spoilage - wine that goes bad and goes to waste before a bottle is finished. Because restaurants have to mark up bottled wine to account for spoilage, Barbera said offering wine on tap is 20 percent to 30 percent less expensive than serving wine by the glass from bottles. -, 2 Sept 2011 [cached]
