Agriculture and Agri-Food Canada's Dr. Jennifer Aalhus led a research initiative that looked into improving bison meat colour on retail shelves.

"My team saw this work as an opportunity to help multiple facets of the bison industry," she said.
"Through our research, we found that FreshCase® improved stability of the colour of bison steaks during retail display," said Dr. Aalhus. "The nitrites contained in the packaging film dissolve in the meat juice upon contact, resulting in a stable colour. Meanwhile, the vacuum package provides the advantages of an anaerobic environment and helps maintain close contact between the meat and the packaging film."
Dr. Aalhus acknowledges that FreshCase® is fairly new technology and, although it has Generally Recognized as Safe (GRAS) status in the United States, it still needs approval for use in Canada. She hopes that this research will help current initiatives aimed at getting that approval, as it could also have a wider impact on Canada's agricultural industry.
"The bison industry is not the only Canadian industry interested in nitrite film packaging," said Dr. Aalhus.
