Chef Ernie Post is the Executive Chef at the Cafe Columbine and Bakery in Fort Collins, Colorado. He won the Steel Chef Competition presented by Viking in the Whole Foods Pavilion this year over an impressive group of Coloradoan chefs. He has worked at the Eaton Country Club, for the Marriot Corporation and for Chef Prudhomme. Chef Ernie is married to Chef Evey Post from Chimney Park Bistro , and they live in Fort Collins.

Chefs Patrick Laguens of Plank and Ernie Post of Café Columbine squared off under the spotlight Saturday night in the third annual Commodities Cook-Off for the Food Bank for Larimer County.
Post whipped up a soup and sandwich meal using the tomato sauce to make soup and putting the grilled kangaroo medallions on slices of jalapeno cheddar bread he brought with him. He topped the kangaroo with ranchero sauce and some of the ingredients from the pasta dinner. He also created small bowls using melted parmesan cheese that he filled with a Caesar salad. He finished off with a chestnut cheesecake he made using cream cheese, lemon pound cake and pecans he brought in. He topped the dessert with pureed canned fruit. When their votes were tallied, Laguens had 91 points and Post 96. Before the competition, Post vowed to take no prisoners and joked, "If somebody loses and cries, that's too bad." After Post was named the winner and received his trophy - a Sears Trostel Lumber cooking board, he said, "My philosophy for the night was to help a great cause and have fun." The competition is especially fun for Evey and Ernie Post, husband and wife chefs at different restaurants and rivals during the competition."Last year she asked me if I was going to help her again, and I said, 'Maybe I want to compete against you,' " said Ernie Post, executive chef at Café Columbine and Bakery in Fort Collins.Ernie Post said the competition allows him to use his 32 years of culinary experience to create a new dish.This year, his baking staff will create the sweet dish, but Ernie is in charge of the savory competition.His dish is also a secret but incorporates the lemon chalet crème, he said."There's a thing amongst chefs: We like to compete against each other," Ernie Post said.
