Having a food flight of fancy means sieving on the edge
Ellen Lauber of Helm New York, a vitamin company, invented the "Chipper," a chocolate-chip cookie stuffed full of nutrients. Her secret, she said, is Canadian yellow pea protein and pea fiber. "Who said that things don't have to taste good to be healthy?"Lauber said. For every good idea on the Anaheim Convention Center floor, there are hundreds that never made it.Like "Fish Chewies" or the peanut butter and jelly hamburger. Lauber, who majored in food science at Rutgers University, came up with the idea for a nacho cheese-flavored fish chew made from little-known fish like the red hake or the ling. "The names of the fish weren't appealing," Lauber said. The scientists at Kerry invented the peanut butter and jelly hamburger but could not sell it to a burger chain.
