Soon after taking over as general manager of Cafeteria Boston
in June of 2009, Demetri Tsolakis
was faced with the challenge of re-branding the restaurant at Newbury and Gloucester streets.
chose to abandon the traditional Italian menu and take the establishment's lunchroom name literally, adopting the catchphrase "Tray Chic."
The menu currently offers comfort-food staples prepared with fresh ingredients, including organic grass-fed beef and lamb, free-range chicken and local seafood and produce.
Diners at the bar can also take advantage of one of the Back Bay's hidden dining values - a hamburger for only $5 all day, every day.
"It's food that says 'welcome home,'" said Tsolakis
, a Springfield native who grew up in the restaurant business.
"The cafeteria was always a place where you got together with your friends… and a lot of locals have already made this their hangout," Tsolakis
