...Chris joined the Disneyland Resort Food and Beverage team as the Food Concept and Product Development Manager in early August 2005, during an exciting time for the Resort - the 50th Anniversary Celebration.
Chris partners with Resort Culinary teams from casual and fine dining, banquets, quick service restaurants, and outdoor vending food locations to develop and implement menu concept initiatives.Chris
brings to Disney
over 14 years of experience and education in the food industry.His
education began with the U.S. Navy Service Command in 1992 serving mostly overseas in varying kitchens and dynamics.He
continued on from there to the Palomino Euro Bistro Restaurant in San Francisco.In 1997, Chris attended the California Culinary Academy in San Francisco.After Graduating, he was a Sous Chef at Scott's Seafood Grill & Bar in Costa Mesa, California, then went on to help open the ABC Soap Opera Bistro in Disney's California Adventure until 2002.He then moved on to become the Head Chef of TAPS Fish House & Brewery in Brea, California.
In January, 2004, Chris
attended "Apicius" the Culinary Institute of Florence
(Italy), which focused on the study of Regional Italian Cuisine with a special focus on traditional tastes of Northern Italy.During this stint, he
learned advanced baking techniques at a family-owned Florentine Bakery
After this great experience, Chris
returned to become the Executive Chef back at TAPS Fish House & Brewery
.In that role, he directed food production for all restaurant areas and banquet functions including menu development, food purchasing specifications and recipes.
also had the experience of creating and executing specialty menus featuring Stags Leap winery, Flora Springs winery, Autumn and Spring "Taste of the Harvest" Beer dinners and Cigar dinners.
Christopher's wife Cristina also works at the Disneyland Resort
, and her
family owns the Guglielmo Winery in Morgan Hill, California.They have a 1 year old daughter named Isabella.In his
spare time, Chris
enjoys cooking (no surprise) and scuba diving.For Christopher
