That would be hard for anybody," laments Charlie Menard, who's been head chef at the Inn at the Round Barn since 2000. (Most of DeFreest's employees have been with her for more than a decade.) "But AnneMarie is a tough woman, and she's been able to carry a lot."
That she has, but now DeFreest needs to pick her battles. Last year, she got news that her cancer had returned just as she and her attorney were preparing a case before the Vermont Supreme Court. They were appealing a decision by the Vermont Department of Taxes, which had fined her $95,000 for not collecting a 9 percent service tax on her staff who serve at Round Barn functions.

Charlie Menard, chef at Waitsfield's Inn at the Round Barn, said a change in at-home diet can save money.
Menard suggests saving money by buying quality over quantity, even if there's a sale. "Buy what you need. Don't be tricked into buying 10 when you need two because you'll use more if it's around. Buy for quality before price - you'll make better use of it when you respect it," he says.

Charlie Menard, executive chef at The Inn at the Round Barn Farm in Waitsfield, has bought Dana Forest Farm mushrooms since 2010. He likes to give them a "nice hard saute to get some color on them and intensify the flavor," he says, before folding them into creamy polenta to serve with rabbit or combining them with fresh goat cheese and caramelized leeks in a phyllo pastry cup for an appetizer.
Compared with shiitakes Menard has bought in the past, the forest-grown mushrooms are "just a totally different thing," he said.
