Radisson Resorts is pleased to announce the appointment of Bruno Brazier as executive chef of the new Radisson St Martin Resort, Marina & Spa which opened in December 2008. As executive chef, he will oversee the resort’s three dining options, including C Le Restaurant, the open air “hot-spot” that will be known as much for its gourmet French Caribbean cuisine as its breathtaking beachfront views.
Chef Brazier has led kitchens across the globe and credits the time in California as most impacting his style. It is where he developed his signature of pairing fresh wine country cuisine and French fusion, which will be unveiled with a Caribbean twist at Radisson St Martin’s C Le Restaurant. A preview of the C Le Restaurant menu was offered to guests at the “St. Michaels Food & Wine Festival” in St. Michaels, Maryland, April 24-27, 2008. Brazier prepared dishes for the festival including Rock Lobster and Tropical Freshwater Prawns with Avocado Ratouille with Sesame Balsamique Vinaigrette á la Menthe Poivrée and Banana-Figues Flambéed in Aged Plantation Rum with Raw Cane-Sugar Carmelized Almonds and Vanilla Bean Ice Cream.
Born in Paris to an extensive lineage of chefs, Bruno Brazier began his career in Burgundy near Chablis at Auberge and later at the Michelin-starred Clos Longchamps and Relais des Sevres . After joining Le Meridan Hotel in Paris, he has held executive chef positions in Syria, Egypt, Guadeloupe and Newport Beach, California.

At night, C Le Restaurant transforms into an upscale lounge and gourmet restaurant that showcases Executive Chef Bruno Brazier's contemporary French/Caribbean culinary style and takes French cuisine to a whole new level. In addition, the restaurant caters to Weddings and Group functions where Chef Brazier and his team can customize the menu to your liking.
Barbara and I have dined at C Le Restaurant several times over the years and, on each and every occasion, Chef Brazier and his team have overwhelmed us.
