This "Sex and the City" inspired weekly event is the brainchild of Bill Panzica, owner of Chocolate Bar on Chippewa and other locations scattered throughout the United States.
Looking for a way to beef up profits on slow Monday evenings at his Cleveland location, Panzica thought up the ultimate ladies' night, and Martinis and Manicures Mondays were born. If the list gets too long, customers sometimes get turned away, but they're offered a prime spot on the list for the following Monday, Panzica said.

"The Cleveland people just kind of fell out of the sky," said William Panzica, Chocolate Bar owner and director of franchise development.
Guests staying in the Hampton Inn, which houses the restaurant, had been expressing interest in franchising since it opened in 2006, Panzica said. So he and his wife, Carolyn, registered the Chocolate Bar as a franchise. Panzica, former owner of Butterwood Desserts, worked with Noco Energy Corp. subsidiary Franchise Development & Marketing Group to develop the franchise.

"The upstairs was extremely important to my business model," said Butterwood owner and Williamsville resident Claire Bacon, who purchased the business from former owner Bill Panzica and his wife in 2009.
In 2004, Panzica sought permission from the village to set up second-floor seating, but later withdrew his application. Panzica said he used second-floor seating only for "overflow" seating, primarily on Friday and Saturday nights and never sat more than 50 patrons. "The seating upstairs was a very small, insignificant part of a business," he said. "I did not operate that upstairs any way other than how Mr. Panzica trained me to operate it," she said. "I've never not met my obligations to him." She continues to operate the West Falls location and said she's working hard to make sure all her Northtowns customers are inconvenienced as little as possible, offering them price breaks and modest delivery charges.
